Sonofresco Announces Hands-On Coffee Roaster Sessions Two-Day Event Offers Skills and Practical Experience for Start-Up Roasters

VANCOUVER, Wash., April 27, 2019 /PRNewswire-PRWeb/ -- Sonofresco, Coffee Holding Company, and OPTCO will offer a hands-on workshop for start-up coffee roasters on May 15 and 16 at Organic Products Trading Company. The Vancouver event will feature the expert knowledge of Kathi Zollman of Coffee Holding Company and OPTCO. Registration is limited to 20 people.

The two-day workshop will cover the essentials of coffee roasting for beginners. Day One focuses on cupping, the practice of examining the tastes and aromas of coffee, starting with protocol and terminology. Instruction moves on to calibration cupping, allowing attendees to apply their new skills. The day ends with Le Nez de Café (the Nose of Coffee). Participants will explore the role of aromatics in the perception of flavor, including the changes in green coffee as it is roasted to different levels of brown.

The workshop's second day will build on the basics, beginning with a hands-on session dedicated to the dynamics of flavor. This sensory exploration will include flavor modulation, the contrast between taste and aroma, and the effect of heat, as well as the use of food samples to build flavors. The second session on Le Nez du Café will return to aromatics, focusing on roast profiles and specific attributes. Participants will then test their skills with an aromatics exam. The workshop ends with a practical triangulation exam, as attendees use their newly acquired cupping skills to identify the differences between coffees.

With more than 22 years of experience, instructor Kathi Zollman has been published in a variety of coffee trade publications. She is known for her enthusiasm, dedication to social projects, and contributions to the science of coffee roasting.
